But first, here’s mine:
Comfort Food, we all have our favorites. Sometimes it’s food we grew up with, recipes that are handed down from family to family. It’s almost always a dish that we could eat just about any time or any place and never tire of.
I’ve a long list of comfort foods but one of my favorites is the Greek Style Pizza that Chris makes. It started off with a recipe idea he found but was soon to be altered to his own style. The end result is a delicious, thin crust pizza rich with flavors and nutrition. It can make a meal or be served to company as a snack.
GREEK STYLE PIZZA
YOU WILL NEED:
1 (12 inch) frozen or fresh thin style pizza crust
2 cups of washed baby spinach leaves
1/2 thinly sliced red onion
4 cloves of minced garlic
1 cup crumbled feta cheese
1/2 cup of mayonnaise
1/2 cup oil-packed sun-dried tomatoes chopped
1/3 cup pitted and chopped kalamata olives
1/3 teaspoon of dried oregano
WHAT TO DO: pre-heat oven to 450F and adjust rack to lowest level
Place pizza crust on a baking sheet. Spread mayonnaise over crust, then sprinkle garlic and 1/2 cup of feta cheese evenly. Top with tomatoes, olives and oregano. Bake for about 10 -12 minnutes.
Toss the spinach with onions and 1TB. of the sun-dried tomato oil. Add to top of hot pizza and sprinkle on remaining 1/2 cup of feta cheese. Bake a few minutes longer until the cheese melts. Cut and serve.
